Microorganisms influence the sensory quality of the coffee beverage through the compounds degradation or release of metabolites that diffuse into the fruit. However, type and duration of fermentation can contribute to the growth and diversity of microorganisms. Thus, the objective of this study was to analyze the microbial and sensory profile of Arabica coffees under different fruit-processing conditions and fermentation by Saccharomyces cerevisiae. Coffee cherries were used in the dry fermentation and washed fermentation at 28°C. Fermentation time ranged from 36 to 288 hours. A panel of sensory attributes was evaluated by 9 Q-graders. Mid-infrared spectra were obtained in the wavenumber range from 4000 to 650 cm?1. Microbial analyses were performed by denaturing gradient gel electrophoresis. Total sensory score for fermented coffee was higher than for unfermented coffee. In 108 and 216 hours of fermentation, the total score was higher in washed fermentation than in dry fermentation, which also shows the influence of post-harvest processing and the removal of husk on the quality of fermented coffee. Balance and body were the sensory attributes that most contributed to group formation in dry fermentation. Thus, induced fermentation increases the sensory classification of coffee beverages with positive effects on chemical and sensory profiles. |

O uso de sementes de alta qualidade fisiológica e sanitária representa importante estratégia na implantação de lavouras de tomate orgânico. Este trabalho foi realizado com o objetivo de avaliar o efeito de tratamentos sanitários na qualidade fisiológica e sanitária de sementes de tomate cereja produzidas sob manejo orgânico. Foram utilizados seis lotes de sementes de tomate cereja oriundos do Rio Grande do Sul e do Espírito Santo. As sementes foram submetidas a tratamentos sanitários alternativos que constaram de imersão das sementes em extratos vegetais (alfavaca-cravo e timbó) e em água destilada, microbiolização das sementes, termoterapia, além de um tratamento padrão com fungicida comercial e uma testemunha sem tratamento. Em seguida, as sementes foram avaliadas quanto à qualidade fisiológica e sanitária. O extrato de timbó reduziu a qualidade fisiológica das sementes de tomate. O tratamento de sementes com extrato de alfavaca-cravo e extrato de timbó inibiu a incidência de Penicillium sp. em sementes de tomate cereja, produzidas sob manejo orgânico. O extrato de alfavaca-cravo é eficiente na manutenção da qualidade fisiológica e sanitária das sementes de tomate cereja sob manejo orgânico.
The use of high quality physiological and sanitary seeds represents an important strategy in the implantation of organic tomato crops. This work was carried out to evaluate the effect of sanitary treatments on physiological and sanitary quality of seeds of tomato grown under organic management. We used six seed lots of cherry tomatoes coming from Rio Grande do Sul and Espírito Santo. The seeds were subjected to alternative sanitary treatments that consisted of soaking seeds in plant extracts and in distilled water, seeds microbiolization, thermotherapy, in addition to standard treatment with commercial fungicide and a control without any treatment. Then the seeds were evaluated for physiological and sanitary quality. Timbó extract reduced the physiological quality of tomato seeds. The treatment of seeds with alfavaca-clove extract and timbó extract inhibited the incidence of Penicillium sp. in cherry tomato seeds, produced under organic management. The alfavaca-cravo extract is efficient in maintaining the physiological and sanitary quality of cherry tomato seeds under organic management.
